We package our coffees the moment they are done roasting. Fresh coffee releases a gas after it is roasted, this one way valve releases this gas while not allowing oxygen in, keeping the coffee fresh during transport.

At Fortunes, we have determined both the length of time and temperature to optimize each coffees best qualities and to achieve the most desired flavor. Our roasters measure the temperature of the actual bean during roasting, not just the inside temperature of the roaster. This eliminates the incosistencies in roast depths due to outside factors such as humidity, barometric pressure and ambient air temperature. |

Of course we use the finest 100% Arabica beans available for all of our quality coffees. Two different decaf methods are available. The Swiss Water Process method is 100% natural, no chemicals are used. The European Process is more economical, but is a chemically processed decaf. |
The beans, after reaching their peak as designated by roast type, are water quenched (a step many roasters
leave out) to freeze the roasting process and cool the gentle bean. If left to air cool, the bean
would continue to cook inside. Flash cooling with a carefully measure amount of water eliminates
the risk of ‘over-roasting’.
All of our fine bulk coffees are available in either a 5 pound, heat sealed, poly valve bag or
a 1 pound, poly-lined tin tie bag. The 5 pound bag features a resealable top to keep the bag closed after
opening. The 1 pound bag features a gold tin tie for reasealing. All coffees are shipped in whole
bean form unless grinding is requested.
